Blueberry-Orange Bread

2 Tbsp. butter
1/4 cup boiling water
1 Tbsp. grated orange rind
1/2 cup orange juice
1 egg
1 cup sugar
2 cups all purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 cup fresh blueberries
1 tsp. grated orange rind
2 Tsp. fresh orange juice
2 Tsp. honey

  Combine butter and boiling water in small bowl;  add 1 Tsp. grated orange rind and 1/2 cup orange juice.  Set mixture aside.

  Beat egg and sugar until light and fluffy.  Combine the flour, baking powder, soda, and salt;  add to egg mixture alternately with orange juice mixture, beginning and ending with flour mixture.

  Fold in blueberries.  spoon batter into a greased and floured 9x5x3  inch loafpan. Bake at 350 for 55 min.  Cool bread in pan 10 min;  remove to wire rack.

  Combine 1 tsp. orange rind, 2 Tbsp.  orange juice, and 2 Tbsp. honey,  mixing well.  Spoon over hot bread;  let cool.  Yield: 1 loaf
